Food: Brooklyn Brine Co. crafts of some delicious items. Today we feature their Maple Bourbon Bread & Butter Pickles. Food: Sriracha is amazing stuff. It can add a great deal of flavor to a variety of foods like eggs, meats, and soups. I make a simple wing glaze using 1 part honey, 1 part sriracha, a dash of whiskey, and a little fresh cilantro. Often times we reach for one brand of sriracha not realizing there are several to choose from. Today we feature another great sriracha sauce from Tabasco. This sriracha has a nice sweet, tangy, spicy, and garlicky flavor to it. It is a delicious sriracha that will add a nice flavor to numerous foods and a change from your usual sriracha choice. Food: Raaka Chocolate has created the first chocolate featuring cask-aged cocoa beans. The aging process adds a great deal flavor to the chocolate, including oak, vanilla, and caramel. The cocoa beans have been matured in Berkshire Mountain Distilling bourbon barrels. Available here.

Food: Brining is like marinating but it is faster and more effective because it tenderizes every protein in the meat, not just the outside. Brines also add moisture to the meat and prevent it from drying out, something we all have struggled with a time or two. Using a brine can really speed things up, as it only takes about 30 minutes for chicken and 1 hour for steak and chops.
